Whole Grain Oatmeal Pancakes

These whole grain oatmeal pancakes are a simple, nourishing twist on a classic breakfast favourite.


Made with oats as the base, they provide slow-digesting carbohydrates and fibre that help support steady energy levels and lasting fullness—especially helpful for busy mornings or active days.


Oatmeal pancakes are an easy way to boost whole grain intake without compromising on taste. Oats naturally contain beta-glucan fibre, which supports heart health and digestive health. Unlike refined flour pancakes, this version offers a gentler impact on blood sugar while still feeling satisfying and nostalgic.


I always grew up topping pancakes with yogurt and jam, so I recommend pairing these with your favourite Greek yogurt for a protein-boost and a chia seed berry jam - try this one! - for a delicious, balanced breakfast that feels indulgent.


These pancakes freeze well also; so make yourself a double batch for a quick & easy weekday breakfast option!

Oatmeal

If you don't have any leftover oatmeal on-hand, simply add 3/4 cup of boiling water to 3/4 cup of rolled oats and let sit until fully absorbed. Be sure to let cool before adding into the pancake recipe!

Combine milk, olive oil and eggs in a measuring cup. Whisk to thoroughly combine.

In a large bowl, add oatmeal, whole wheat flour, baking powder, salt and milk-egg mixture. Stir gently with a fork until combined; batter will be lumpy.

Heat a skillet over medium heat; add a light spray of olive or avocado oil (about 1 tsp). Drop 1/4 cup of batter into pan per pancake. Cook until bubbles begin to form on top and edges look slightly set - about 1-2 minutes. Flip and cook for another 1 minute. Continue until all batter is used up.

1/2 whole wheat flour

1 tsp baking powder

1/8 tsp salt

2 eggs

1/2 cup milk (of choice)

1 Tbsp olive oil

1 tsp vanilla extract

1/2 tsp ground cinnamon (optional)

1 1/2 cups oatmeal (cooked)*
